Max Rimaldi

Founder & CEO

Max is a lifelong restaurateur, but his greatest achievement is expanding Pizzeria Libretto from one popular Ossington location to multiple restaurants across Toronto — all while launching beloved eateries like Enoteca Sociale, Bar Isabel, and Rosalinda.

Having worked at some of the city’s most upscale restaurants, Max is passionate about democratizing fine dining and offering stellar food experiences at all price ranges.

As the father of three young boys, his ultimate goal is to be the best dad possible by making the meanest peanut butter, jam, and banana sandwich!

Rocco Agostino

Executive Chef & Partner

Born and raised in Toronto, Chef Rocco’s strong passion for Italian food comes from growing up watching his mom in the kitchen.

He and his partners cultivated Toronto’s love for Neapolitan pizza by serving up authentic pies and expanding the Pizzeria Libretto brand across the city. For years, Chef Rocco’s food has gained raving fans thanks to his dedication to simplicity and quality ingredients. The Libretto ethos of offering delicious pies and elevated service in casual, family-friendly neighbourhood restaurants continues to be a resounding success.

Outside the kitchen, Chef Rocco is a father of two and husband to a personal trainer. One of the family’s favourite foods, other than pizza and pasta, is chicken wings. They also share a love of baseball.

Rocco is also a partner at Enoteca Sociale, a Michelin Bib Gourmand Roman restaurant in Toronto.

Deni Di Tullio

Retail Sales & Partner

Deni is a lifelong entrepreneur and strategy-driven partner with 30 years of industry-leading expertise. His role at Pizzeria Libretto is facilitating and building tactical management, as well as leading innovative product development teams.

His latest project was building and designing the Central Commissary Kitchen that supports Libretto’s restaurants. He also masterminded a full-scale production facility for Neapolitan frozen pizza and other retail grocery items.

Deni’s personal passions are building, fixing, and improving things — he loves a good challenge, no matter what kind. He is also a loving husband of 25+ years, father to two adult children, and pet father to his most needy kids: two French bulldogs.

Hilary Drago

Senior Operations Manager

Hilary joined Pizzeria Libretto in April 2012 as a bartender at the Danforth location. Her love for Neapolitan pizza and belief in the Pizzeria Libretto brand helped her move up quickly in the company. After completing George Brown College’s Event Management program in the Hospitality division, she worked for almost four years as an Events & Marketing Manager at Libretto. Eventually, her passion for service and people drove her back to Operations.

When Hilary is not talking pizza (which is rare), she loves to entertain friends and family, often hosting small gatherings and annual holiday get-togethers. She’s not too shabby in the kitchen and loves to experiment with new recipes. With a strong taste for local Ontario wine, she enjoys spending her summers in Prince Edward County, where she has a family cottage.

Mario Macchione

Regional Chef

Mario has over 18 years of kitchen experience, earning the titles of Executive Chef and then Regional Chef at Pizzeria Libretto. He has a deep passion for the food industry, most notably Italian cuisine. As an Italian, he’s naturally drawn to the culture and unique methodologies of all Italian cooking, though pizza-making is his ultimate obsession. To him, it’s a beautiful art.

Among his accolades, Mario was named a Top Underrated Chef in Toronto through View the Vibe, and he is a Red Seal certified chef. Mario recently got married and is a loving uncle to his nieces and nephew.

Whitney Genge

Marketing Coordinator

Whitney has spent over a decade in the hospitality industry with roles ranging from front-of-house to corporate. She focuses on all facets of marketing at Pizzeria Libretto, leading traditional and digital marketing efforts while managing communications and public relations.

Prior to her work at Libretto, Whitney lived in Australia, where she was a Business Development Manager for some of Sydney’s top hospitality supply companies. Upon her return home, Whitney joined Libretto as a server and eventually worked her way into the role of Marketing Coordinator, where she combines her two passions: food and communicating with people. Outside of work, you’ll find Whitney at the gym, travelling, or exploring Toronto’s growing food scene.
